These green cakes of goodness are a Sunday morning staple in our house.High in protein, packed full of iron and they taste delicious. Hidden greens make these pancakes a great healthy alternative!
4-6 egg whites 1 ripe banana 2-3 handfuls spinach 1-2 tsp cinnamon Fruit of your choice
Step 1. blend all ingredients together WELL for 30 seconds
Step 2. heat pan to medium heat
Step 3. place some of the batter in the pan (the pancake should be a little bigger than your palm) then place lid on top (helps cook the top faster)
Step 4. flip pancake cook for 10 20 seconds then repeat with the rest of the batter
Step 5. stack them up and enjoy with toppings of your choice. my favorite is blue berries, strawberries, 1-2 TBsps of yoghurt and passion fruit squeezed over the top
